I Promise......

i haven't fallen off the face of the earth!

this summer has been so busy but i wouldn't expect any less. i'm actually looking forward to school starting so that we can all get back on a schedule. amazingly, paige is ready for school to start...or at least it seems. she already has her backpack ready with supplies enclosed! (is this really my child?!) 6th grade.....wow....how time flies.

anyway, there has been a lot going on as i said with my photography. i have some very exciting stuff to share! i've done 4 sessions that i'm absolutely in LOVE with and CANNOT wait to show off! also, the album you see below showing off one of the sessions is absolutely AMAZING and BEAUTIFUL!!!! i cannot wait to share more on that as well.

last weekend paige and i had a very adventurous weekend that i will be posting along with pictures. some very fun stuff!

Apple Pickin

after church this morning, paige and i headed to the back of our yard to pick apples . we have two apple trees. one tree has green apples that look like granny smith and the other tree has small apples that are green and red.

the green granny smith looking apples look great! they aren't sweet or tart and are very much edible. the red/green ones are small and still a bit tart and we aren't real certain what to expect out of them.

my grandmother, memaw, has an apple tree too and she claims they make the best fried apples.....soooo.....that was the first thing i thought of after picking ours. i threw lots of butter (paula deen style), sliced apples, brown sugar, cinnamon and nutmeg into a skillet and whipped up some YUMMM-O (as rachel ray would say) fried apples!

Random Stuff

Lemon Tarts

here is a lemon tart recipe i made recently for a cookout. it's definitely worth sharing.
Lemon Filling:
(simply mix all ingredients together)
4 Eggs Beaten
1 Cup Powder Sugar
2/3 Cup Fresh Lemon Juice (about 5 or 6 lemons)
2 Tbsp Sour Cream

Pastry Shells (or pie crust)

our local grocery store didn't have any pastry shells so instead i got pie crust, rolled it out thinner and cut out about 4" circles. i got quite a few out of one pie crust (you could use a cookie cutter or i used a jar lid). i put the circle of pie crusts in the bottom of muffin tins and then used a small spoon to add the lemon filling.

Bake at 350 degrees for 15 minutes

now, my first batch was a bit tart for my taste due to the fresh lemon juice....so i added more powder sugar to my pie filling mixture. the original recipe started out with less than a cup of sugar so in the end i ended up with more like 1 cup. you can adjust to your liking.

i also added some powder sugar on top to help sweeten them up even more.

i have a pretty big sweet tooth. i love all kinds of desserts, and lemon desserts are one of my favorite.

Vitamins

something else i'm trying out is adding some vitamins to my diet.
i've been in need of something to give me a little more energy (and maybe help me lose a few pounds in the process too) but i wanted it to be all natural.
a co-worker shared with me that a friend of hers was taking a multi-vitamin with large doses of vitamin B complex and was having a lot of luck. this sounded like it would be exactly what i'm looking for....so i did some research and decided that it should be ok and headed to the vitamin shoppe.
here is what i left with....

i've taken these for two weeks now and i have to admit i'm impressed.
i've been able to eliminate caffeine from my diet and feel great!
it's hard to explain how it feels other than i feel more alert and focused. i've noticed situations where i would usually find myself practically falling asleep and instead i'm awake and alert and able to function!
i'm going to keep going and see how it continues........but so far so good!
