Grillin' A Great Recipe

spring is here so it's time to break out the grill!

we have a charcoal grill that rocks! it's cooks up some the the BEST food. one thing i LOVE about this time of the year is that the rolls reverse when it come to cooking supper. now, when we get home, it's kent whipping up the meal while we assist and wait. lovin that! :0)

years ago, kent traveled for a telecommunication company. he was a lead of five guys that would travel regionally and most of the group was from kentucky. it was common for each of the guy's families to host the crew for a night or more depending on what area they would be traveling. with us being centrally located in the state we did a lot of hosting. during this time we ate good! we would literally have FEASTS. one of the guys shared a great recipe that to this day we still fix and enjoy. we call it......

salt and vinegar cornish hens


in a sauce pan bring to a boil:
one stick of butter
1 cup of water
1/2 cup of salt
16 oz of white vinegar
1 TB of crushed red peppers

allow to boil for a bit to mix everything well

now, while you are boiling your ingredients you've already got the cornish hens on the grill starting to cook. we normally fix three small cornish hens (one for each of us because they are small).

about mid way through the cooking of the hens start to dip them in the sauce pan and return them to the grill for a few minutes and continue to dip them after approximately 10 minutes on the grill at a time. continue until they are completely cooked. i honestly can't provide a time here on how long to expect it to take....kent is the master of this.

this is definitely not the healthiest meal (so we don't cook it too often because of that reason only) but it's very good! it's worth the overload of sodium and fat to enjoy this every now and then!
