Funnel Cakes

if you've ever had a funnel cake you know how wonderful they are.....YUM!!!

i recently came across a few recipes for funnel cakes and knew i HAD to give it a try. what? make funnel cakes at home?! get out! like some other food favorites of ours...being able to make these foods at home can be dangerous. and i'll forewarn you now.....

it's SO SO hard to eat just one.

don't say i didn't warn you. :D

i highly recommend using an iron skillet.

and, make sure to place your cooked cake on paper towel. gotta soak up some of that oil.

then a dusting of the wonderful powdered sugar.

this recipe makes a pretty good batch of cakes



mix dry first:



3 cups of all purpose flour

1/4 cup of sugar

2 teaspoons of baking powder

1/2 teaspoon of salt



wet ingredients



2 and 1/4 cups of milk

1/2 teaspoon of vanilla extract (i usually use the cap to measure)

3 whole eggs



mix wet into dry ingredients



heat canola oil in the skillet and then use a funnel like object to pour your batter into

the skillet so that you can swirl it. fry until golden brown on both sides and puffed up a bit.

remove from skillet when done, place on paper towel on a plate and dust with powdered sugar.
